Large Batch of Chai
6 Quarts Water
1.5 cups sliced ginger (winter chai: I use additional ginger)
3 TB cardamom pods
3 TB allspice
2 TB cardamom seeds
4 cinnamon sticks
1 TB cloves
1 TB black peppercorns (winter chai: I use additional peppercorns)
1 tsp anise (summer chai: I use more anise)
Bring to a boil and then simmer 30 minutes.
Add milk of your choice and simmer another 15 minutes to blend milk and chai spices.
Add sweetener of your choice. I use maple syrup.
